Our fish is morning-caught and shipped directly from the source, guaranteeing exceptional freshness. Unbound by traditional constraints, we incorporate rare ingredients and diverse culinary techniques—such as low-temperature aging and kombu curing—to craft sushi that highlights the unique character of every fish.
